The traditional Honbazuke honing means that the blade is sharpened and polished by hand in three complex stages: coarsely ground with a vertically rotating sharpening stone, fine honing with a horizontal rotating sharpening stone and finally polishing the edge with a leather stropping block. This handwork makes sharpness scalpel-like.
